Spicy Sweet Potato Black Bean Skillet

One of the misconceptions of eating healthy is that it doesn't taste good or you can't be a foodie. This is definitely not true! I absolutely love to eat and especially enjoy trying new foods and restaurants when traveling. My husband and I don't just eat anywhere, but we have found some of the most amazing food at 'healthy' restaurants and in the middle of nowhere. These trips have served as inspiration for where we eat most, right at home. At home, you know what is going into your food and it also helps you feel more connected to your nutrition.



This Spicy Sweet Potato Black Bean Skillet was born from our love of green chiles. We only lived in New Mexico for a short time, but it was long enough for an addiction to green chiles to form. It has been very difficult to find the same level of flavor and spice in Ohio, but the Zia Hatch Green Chiles come very close.


We also had an abundance of sweet potatoes from our last Imperfect Foods Box and needed a plan for them that wasn't the same old thing. This turned out amazing and was very easy to make. It's similar to enchiladas with the same ingredients, but this is less messy and allows you to avoid the tortilla. You can make it vegan by not adding yogurt so this delicious meal can be enjoyed by most everyone. There is no gluten, no dairy if you skip the yogurt, and no grains. Of course, it is pretty amazing served over rice with tortilla chips, but definitely not necessary.



I hope you will give this recipe a try and that you'll enjoy it as much as we do. If you don't like spicy food you can add mild canned green chiles, which have hardly any spice at all, or skip them all together.
